Deciding what to take for work lunch is no less than a task. It is a daily challenge that we all face, and relying on office cafeterias or nearby restaurants is not a healthy or budget friendly option. So, to give your tiffin time a healthy twist, Chef Guntas Sethi has recently shared some easy recipes on her official Instagram handle to prepare a Mexican meal box. From Mexican Bean rice to Guacamole, the video shows the preparation of some flavourful dishes that are just perfect for lunch time.

Mexican Bean Rice:
Ingredients:
- 2 tablespoons oil
- 1 cup boiled rajma
- 2 cups tomato puree
- Chopped garlic, onion and jalapenos chilli
- 2 tablespoons Mexican seasoning
- 1 cup soaked rice
- 1 tablespoon cumin powder
- 1 tablespoon chilli flakes
- Salt to taste
To make healthy and delicious Mexican bean rice, pour 2 tablespoons of oil into a rice cooker and add chopped garlic, chopped onion, chopped jalapenos chilli, 1 cup boiled rajma, 2 cups tomato puree, 1 cup soaked rice, and salt. Sprinkle Mexican seasoning, cumin powder, and chilli flakes into it and mix it together. Add water as needed to cook the rice, and cook it nicely. Once done, garnish it with chopped coriander leaves and enjoy the flavourful dish.
Charred Corn Salsa
Ingredients:
- 1 cup boiled corn kernels
- 1 tbsp butter
- 1 tsp Mexican seasoning
- Salt to taste
- 1/2 chopped onion
- 1/2 cup finely chopped bell peppers
- 1 chopped jalapeno
- Chopped coriander leaves
Next, to cook charred corn salsa, put slices of butter in a pan and roast 1 cup of boiled corn kernels. Add 1 tablespoon of Mexican seasoning and salt to taste. Toss it well, take it out on a plate, and add 1/2 cup chopped onion, 1/2 cup finely chopped bell peppers, 1 chopped jalapeno, and chopped coriander leaves. Squeeze some lemon juice and mix everything together.
Guacamole:
Ingredients:
- 1 avocado
- 1/2 lemon juice
- Chopped coriander
- Salt to taste
Coming to the recipe of Guacamole, take an avocado and squeeze 1/2 lemon into it. Add chopped coriander and salt to taste. Eat it with nachos for additional taste. Notably, avocados are delicious fruits packed with different vitamins and minerals.
Mint Chia Cooler
Ingredients:
- 2 tbsp soaked chia seeds
- Few slices of lemon
- Few mint leaves
- Water as needed
Lastly, take a bottle filled with water, add 2 tablespoons of soaked chia seeds, and put a few slices of lemon into it. Add a few mint leaves, and your refreshing drink for a hot summer day is ready.
